Born in a family of restaurateurs, Jeremie’s passion for food began very early in life. After having started with his father at the restaurant Le Mitoyen, he attended the Institut du Tourisme et d’ Hôtellerie du Québec (ITHQ) while working as an apprentice under the direction of Chef Ian Perreault at Area.
His passion for traveling and his desire to learn then took him to France, at David Zuddas’s restaurant (one Michelin Star), to San Francisco where he worked with Chef Nancy Oaks at Boulevard and to Vancouver at Rob Feenie’s restaurant, Lumiere. In 2007, at just 25 years old, Jérémie signed on to be head chef at Vancouver’s new restaurant; Boneta.
After seven years in Vancouver, Jérémie embarked on a journey through Asia, before joining the inspiring Rockpool Group in Australia.
He is now back in Montreal after over 10 years to realise an old dream, opening Monarque, a restaurant where he can express himself in a generous and inspired cuisine.
